Bismillahirrahmaanirrahiim mari Belajar Masak Cashews Chili Crusted Snapper With Shrimp & Cucumber Wraps ini saya dapatkan saat menghadiri acara Gebyar Perikanan di JX Surabaya yaitu resep yang di demonstrasikan oleh Chef Juna pada acara tersebut, barangkali ada yang berminat untuk mencoba dirumah.

Berikut ini bahan dan cara pembuatannya [dari copy resep yang saya peroleh semua tertulis versi Bahasa Inggris, sengaja tidak di translate agar tidak terjadi bias penerjemahan] sesuai tulisan aslinya:
Materials:
-          ½ Cup Cornstarch
-          1 teaspoon chili powder
-          ¾ teaspoon salt
-          ½ teaspoon finely ground black pepper
-          3 large egg whites
-          2 cups shaved toastedcashews
-          300 grams skinless red snapper fillet cut to small tenders
-          1 Japanese cucumber
-          200 grams cooked headless skinless tail-off small shrimps
-          4 tablespoon Japanese mayonnaise [kewpie]
-          1 teaspoon fresh lemon juice
-          ¼ teaspoon ground white pepper
-          Corn oil for deep frying
-          8 – 12 small wheat tortillas [ OR just tortillas]
-          Small bottle of hoisin sauce
-          1 lemon for garnish
-          Tatsoi OR mizuna mesclun fo garnish [about 50 Grams]
How To Make
  • Mix cornstarch, chili powder, salt & pepper in a shallow bowl
  • Beat egg whites in medium mixing bowl till frothy. And place shaved toasted in another shallow bowl
  • Dredge fish in cornstarch mixture, shake off excess. Dip the chicken in the egg whites, then press to cashews, turning to coat both sides. Then rest in a tray/plate with parchment papers.
  • Heat oil to 350 OF [+177 OC] for deep frying. Then deep fry the fish in batches, fry until cook through about 3 minutes. Then rest on a paper tower lined plate.
  • In another bowl mix kewpie, ground white pepper, and lemon juice. Then add the cooked shrimps.
  • Seeded the cucumber [do not peeled] then cut matchsticks size evenly
  • Head the tortilla, spread the tortilla with enough hoisin sauce, lined some of the cucumber, some of the seasoned shrimps, then the fish stickd, the roll up. Repeat with the rest. Better serve warm.
  • Seasoned the greens, then arrange it nicely on te plate.
